Life is a beach!

Hello dear friends! Back at the beach this week with my mom and niece and nephew. Very relaxing down here, and although there still are chores, laundry, and that sort of thing, life has a slower, easier pace. I hope you are all doing well and thanks for the comments. I see some new names ( Francie, Dot, ) and of course my old cyber friends ( Dana, Rosalie, Carey, Kay and Dawn).

I have gone four weeks now without wheat. It's not so much that I want to omit a food group, but it's a way to get a little control of the carb intake. I just wanted to see how far I can take it, and it's not so bad. With some foods it's an all or nothing sort of thing for me. Going wheat free has cut out all the things that I probably was overdoing with all the BLT's  ( bites, licks tastes!!) I'm still having corn and oats, so not grain free, but baby steps for now! I lost 4 pounds in the 4 weeks. Not a world record by any means, but I confess I wasn't tracking carbs during that time and like I said I did have corn and corn products. Going forward I'm going to tighten up on that and get back to counting the carbs and sugars.

So here is a great recipe that have helped me with breakfast. This is a recipe that my DIL ( daughter-in-law) shared with me from the Dukan diet. It's basically a pancake and there are similar recipes out there, but this one is easy and because it's French it's called a Galette!! Oui Oui!! So fancy!!


You can make it sweet or savory. I chopped some fresh chives and basil and made a savory Galette. You could add vanilla, stevia, cinnamon and make a sweet galette. Your choice. I topped with two poached eggs and a little "cheese cracker," ( just melt some shredded parmesan cheese on the griddle until crispy) and it was a very delightful breakfast sans wheat!! I grow my herbs in pots and the the chives, thyme, rosemary come back each year because they are perennials.  I plant the basil each year.

Dukan Oat Bran Galette

Ingredients

    1 1/2 tablespoons of Oat Bran
    1 1/2 tablespoons of non-fat greek yogurt
    1 egg or one egg white ( I used egg white)

Directions

Put oat bran in a bowl, add non-fat yogurt and one egg.

Mix all the ingredients thoroughly and pour on to a non stick pan that has been greased beforehand
Cook for 2-3 minutes each side.

Makes one serving/pancake

    Then I enjoyed a lovely breakfast on my deck!

  1. Ooh la la, you've gone French! I love it! :) Great job on wheat free for one month! That is why I tried wheat free for a while - to help control my eating. It really does help. Enjoy the beach, and I love your deck photo - once it gets warm over here again maybe I'll take breakfast outside too.

  2. I am very proud of you for changing things up and having a successful weigh in, especially when you are relaxing at the beach! How's your knee by the way?
    I am still struggling to totally rein myself in, but I am back to Zumba so that is part of the battle. Especially when I showed up today and there were 100's of kids because the weather was bad and school is out! I love kids, just not 100's and not in a Zumba class:(
    I love seeing your pictures! Do I get to come and visit if we take off on a Nationwide sight seeing tour? Hubby wants a car, I figure what the car he wants costs, we can travel for a year...or more!!!

    Kudos for going wheat free ! I too struggle with keeping the carbs on the lower side. It is all a learning process, trial & error & willpower ! Have a wonderful day !

  5. Your breakfast view is gorgeous. Congrats on the 4 lb weight loss! Better a 4lb loss than a 4 lb gain...LOL! Funny, but I tried the Dukan diet several weeks before starting the BFC and it made me pee a lot (sorry TMI). The problem with that was that I lost A LOT of potassium and started having arrythmias....scared the heck out of me. I ate those Gallete's everyday with cinnamon.....yum! The diet emphasizes the Greek yogurt, too. I think I put Splenda and cinnamon in the yogurt because the stevia made it taste really bitter (Dr. Dukan is okay with Splenda).
    Getting ready to go to Maui and I'm proud to say that I finally (after 12 yrs) bought a bikini and it doesn't look half bad :)

  6. I eat the oat bran galette almost every day for breakfast! I got my husband to try it an he loves it too. I'd been trying to get my MIL to try it for the longest time and was glad she liked it when she finally did-it's not every day that the student gets to teach the master something!

  7. All right, I'm going to also have to watch for oat bran when I next shop. I've read about a lot of people using it on the Low-Carb Friends forums. One more "odd" ingredient to add to my drawer in the fridge...
