What the kale update!



Just wanted to give a quick update on the kale post. My blogger friend Carey pointed out that if you have thyroid problems you need to be careful eating cruciferous vegetables. What are cruciferous vegetables you ask? Well they include broccoli, cauilflower, brussel sprouts, kale and cabbage. The website Livestrong has this to say: 

"Green vegetables, especially kale, contain chemicals called goitrogens that may inhibit absorption of dietary iodine. A decrease in iodine in your body can worsen symptoms of hypothyroidism, a condition where your thyroid gland does not produce enough hormones. The hormones produced by your thyroid gland are essential for regulating your metabolism. Goitrogens are almost completely destroyed during cooking, so avoid eating raw kale in excess with hypothyroidism."

 This is something I knew in the back of my head, but quite frankly  had sort of forgot about it until Carey brought it up. Most of these vegetables I do cook, but I did have the kale raw yesterday. So thanks for the heads up Carey. 

This doesn't mean you have to stop eating these veggies. Just cook them first and that will destroy the goitrogens and make them safe to eat.

  1. Isn't it a bummer that a lot of the lower carb veggies are cruciferous?! I happen to like my veggies raw so I was kind of bummed about this. I also love to have a huge spinach salad, but decided to switch to baby greens instead because I read somewhere that spinach is considered a cruciferous veggie. Maria also says to limit strawberries and peanuts if you have thyroid issues....I just switched to almond butter. I, like you, knew this in the back of my head, but totally forgot until my hair started falling out and I couldn't figure out why.

  2. Good to know! I cook my veggies. I only really like bell peppers raw :-) but Peanuts...OMG I love my organic natural peanut butter will have to switch to nut butters. Good call Thank you Pattie and Carey.

  3. Since Spinach is the only veggie I eat, I was worried, but I looked at lots of different sites and this is a sampling of what was said.
    Spinach is not considered part of the cruciferous family. The

    Cruciferous family includes broccoli, bok choy, cauliflower, cabbage, Brussels sprouts, radishes, kale, collard greens, kohlrabi, rutabaga, and watercress. Spinach is part of the leafy fruit and vegetables family.
