How did it get to be Monday so fast?

Hello all. Where did the weekend go? I am staying up past my bedtime because I feel out of touch with all of you. My new resolve to blog more kind of went by the wayside. Sometimes I have to limit myself on the computer. I have some addictive tendencies towards it! I like to check out all the blogs, facebook, emails and before you know it, alot of time has gone by. Time is in short supply right now, so I have to watch how I spend it. I consider the checking in with my blog and all of yours, an essential part of staying focused, so I needed my fix tonight!

I have had a pretty good week thus far. I thank you for all of your comments lately. I just wanted to clarify that I have not given up on the BFC or joined weight watchers. I am just watching  calories in addition to keeping track of my sugars and carbs. With weight watchers, the point system is just an easier way of keeping track of those calories. They don't advertise it that way, but for the most part a point is about 50 calories. I use it as a tool to help me remember to stay around 1500 calories a day.  I can really tell, that I was probably eating about 400- 500 calories more a day before I was counting. Also note that using fatsecret.com automatically keeps track of your calories and whatever things you ask it too. I try to tap my food choices in and have it calculate the sugars, carbs, and fiber. I am trying to track on paper too, as I feel it is good to be in that habit.  I found that I can easily have too much cheese, mayo, cream cheese, nuts and things like that and still stay within the 15/6 daily limits. For now this is helping realize that I only need a portion of those free foods, and not as much as I want. That is where I was going over in the calories, and maybe why I was losing so slow.. We'll see how it works in the next few weeks for me. I was stalled in the weight loss, so recommitting and tweaking things I hope will help.

I have found that my sweet tooth is really not an issue anymore. If it rears its head, a piece of dark chocolate or some tea really help. I came up with a little dessert that I really enjoyed this weekend too. I took some of the lemon coconut bread from a loaf that I had cut into 12 slices. I used two slices, then cut each slice into rectangles, and then cut each rectangle in half lengthwise. I spread some Natures Hollow jam ( I used the mountain berry) on one side, then a little squirt of reddi whip that I spread on top, and then placed a lid on it. I stuck these in the freezer until frozen. They were a nice little treat with a cup of hot tea. Depending on the size of your loaf and how you cut it, you could even make them more bite size. If you've ever had a petit four, which are little cakes with jam and frosting inside, these kind of reminded me of them. Try it and let me know what you think.







I've started the Christmas decorating. Everything is almost done, except for the large real tree that we get the day after Thanksgiving. I have the 3 artificial ones up. I can't believe that I gave into that, but it was sure easier and less messy that setting up four live trees! I'll post some pictures soon.

  1. Pattie, I love your Christmas decorations and I cant believe that it is almost Thanksgiving and all the hustle and bustle is ready to begin. I love reading your blogs and I can totally relate to trying to find the time. I love your idea with the coconut bread. I love eating it with cream cheese and natures hollow but I just might have to give your little creation a try.

  2. What a great idea to make frozen coconut bread snacks. I think that if using ww as a way to help you stay low sugar, better carb and all over healthier works for you more power to you. There is not one way that will make sense to everyone and work, you need to do everything you can to make this work for you.

  3. I know what you mean about the internet and the addiction - that happens to me as well. I need to just turn away sometimes.

    I love that petit fours idea! Way to go! I think I may need to try this out myself. I only have apricot jam right now, but that might work ok. Now I have an excuse to get some more raspberry. LOL! Have a good night!

  4. What a great idea for a dessert! I really do need to try the bread again. I just found my coconut flour when I was getting rid of food my daughter left behind. I read on a low carb blog that the brand of flour makes a big difference when using coconut flour. I got mine in a bulk bin so I wonder if that contributed to how BAD it was?

    I have to say that I am proud of you for reducing your calories. The article that minichick posted in Rosalies blog was really good. It ended with calories do count. Weight watchers adjusts the calories/points allowed down as your weight drops...I was only allowed 20 points a day or about 1200 calories. That's not very many:( 1500 sounds like a good place to be. The bottom line is that we have to be able to do this for the rest of our lives, or modify our lives to fit the lifestyle.

  6. Great idea about preparing those treats and putting in freezer-all ready to go. Very smart.
    You must get a lot of happiness from all the holiday celebrating. I'm sure your home looks adorable.
    ...and yes, Pinterest could be another addiction, but I have found great recipes there too. I am on the computer way more now that I'm BFC/FT blogging, but you all help me stay on track. I don't think I would have lasted this long without all your support.

  7. HI Pattie, I think we all get a little addicted to the computer sometimes. I think whatever works as far as WW or BFC. We all need support and I love our little group of bloggers.
    I have tried the bread that way but not frozen. You know me I put RediWhip on everything.

  8. Pattie, that really is a good idea for a frozen treat! I need to get some more of that natures hollow jam. I hate that I can't find it in the store and have to order it online. Shipping rates just kill the cost of the jam. I have to tell you that I was feeling a bit down today but looking at your Christmas decorations cheered me up! That Santa is so cute!

  9. Hey Pattie! Yesterday's calorie count was about 1400 calories. I cut way back on nuts, cheese, and put my coconut bread in the freezer. I am feeling great this morning, down almost a pound. And I didn't feel hungry yesterday, either! Definitely an added bonus!

  10. Had to tell you I made the Pumpkin white bean chili,,,, I really didn't think it would be so good. It is a keeper mmmmm. Brian (son) and husband liked it too. You are right,,,, It makes a LOT, Will make a good lunch for several days for me. I also put diced tomatoes in. Thanks for putting it on your blog.
