Happy New You!

Happy New You and New Year!

I 'm hoping that this is the best year for everyone, that all your dreams come true and you reach any goals you set for yourself.

I am snuggled in warm and toasty, while it is blustery and cold outside. Mother nature dropped about 6 inches of snow on us last night. Nothing beats a good snow day.

I'm sitting here contemplating taking down some Christmas decorations. It's a very long process and I need to do it in stages. Maybe another day. I think I'll make another cup of bulletproof coffee and continue to surf the web. What's bulletproof coffee you ask? Why I'd be happy to tell you about my latest obsession. Just take a moment to let go of everything you thought was true about fat and keep an open mind. Maybe it will change your life like it did mine.

To give credit to the founder, click on the link for bulletproof coffee. I can't take the credit, but it is blazing up the Wheat Belly Facebook groups as everyone is jumping on the bandwagon.

Basically you brew some coffee. Add up to a tablespoon of really good coconut oil, a tablespoon of grass fed organic butter and some organic cream or 1/2 and 1/2.  Some people start out with a tsp of each and work up to more. I add cinnamon ( very good for regulating blood sugar and many other health benefits) and drops of Stevia. Some people use a regular blender, but I use a stick blender to whip it up in a large mug. It gets frothy and creamy and is so filling and delicious.

You are giving your body large amounts of good fats, and lauric acid from the coconut oil. Coconut oil has a lot of lauric acid. Besides breast milk, it is one of the highest sources of lauric acid. Your brain needs good quality fat to function and we are limiting it based on what we've always been told. What if everything you thought to be true, that was fed to you by agribusiness and pharmaceutical companies was wrong? Keep an open mind!

Dr. William Davis, a preventative cardiologist and author of Wheat Belly and Dr. David Perlmutter, a neurologist and author of Grain Brain feel very differently about these fats. They say to stay away from unhealthy trans fats, but  saturated fats need not be limited.

Dr. Perlmutter writes on page 90 of his book " few people understand that saturated fat plays a pivotal role in a lot of biochemical equations that keep us healthy. If you were breast fed as a baby then saturated fats were you staple, as they make up 54% of the fat in breast milk."

So here's what you need to make bulletproof coffee. It will feed your brain, make you feel alert (not just from caffeine as I make mine decaffeinated) and give you amazing energy to start your day. You may not need breakfast and that's okay, as you are getting fat for energy.

  1. I wish I drank coffee because that looks good! I do get my coconut oil, though, and believe it's really helped me in losing weight. I make some yummy coconut fudge (but make it low carb with stevia and just a smidge of honey......I've played around with the recipe and the fudge really needs just a bit of honey to taste right and it still is under 2g of sugar) Are you following wheat belly now? I would follow wheat belly, but need a more paleo eating style because it seems I'm sensitive to dairy and gluten....BUMMER! I ate whatever I wanted on NYE and am paying for it now....my face is a broken out mess because of the dairy (but the brie was kind of worth it) and my allergies are going crazy because of the gluten (soooo not worth it!) Anyhow, Happy New Year and glad to see a blog post! I missed reading your posts :)

    1. Hi Carey. So glad to hear from you. I am following wheat belly now. I just realized that I had to make that leap as I really think wheat and even grains are holding my back. Probably dairy too, but I can't go that far yet! I find that I don't crave as much when I don't eat wheat, and I honestly feel it is helping my knee. I was ready to go and talk about the next step moving towards knee replacement but it really seems better. At Christmas I had a few spoonfuls of mac and cheese and a few days later, my knee was really sore. Coincidence maybe, but I don't need the carbs from wheat and why mess with a good thing. I just feel better without the wheat, and I really need to get some weight off. The BFC was allowing me too many grains and I was taking advantage of that and not losing. Happy New Year to you!

  2. I may try that because I need to use up my coconut oil. I used it on my hair once, and haven't used it since. I would be interested in the fudge recipe too.
    I am on day 7 of my getting sugar back out of my system and it feels so good.
    I am curious what you eat since you don't do wheat anymore? No rolls? I have seen some interesting recipes of pinterest that don't have wheat. I don't have any sensitivity to it, so no need to ditch it.

    1. Hi Kay! I'm trying to get myself blogging again. I m really feeling better without the wheat. My knee is doing well and I'm not craving things I shouldn't eat. Once you get into it, you will see that there are so may things you can eat. I always say Rosalie is really almost wheat free as she bakes all the breads and treats without wheat. I am trying not to do that, but I did make some muffins and almond bread. At the other meals, I'm eating protein and veggies with butter. You can have potatoes, but if trying to lose it's better to leave them out until you get to your goal. Although I did go out to dinner on Friday and Saturday and my meals came with mashed potatoes one night and sweet potatoes the other. I figured that was my treat, but when at home I'm not eating that. You know Jorge, and Maria, and Dr. Davis of Wheat Belly are allvery similar. It's about keeping the sugars low and the carbs lower and that will keep your insulin levels lower. Also with the wheat, I wouldn't say I have a sensitivity to it, but when you read the Wheat Belly and also Grain Brain by Dr. David Perlmutter, you realize how bad it really it really is for us. The changes that happen for people once they give up wheat are sometimes really remarkable ( less allergies, skin conditions, joint pain, sinus infections etc.) There are two good facebook groups, one called Wheat Belly for life with Tammi Carter,and the other Wheat Belly. I also follow Jorge's group and the 100 group. Lots of great tips and recipes on all of them.

  3. I really like bulletproof coffee, too. I don't hardly ever drink it because I hardly ever have unsalted organic butter. Maybe I'll get some this weekend. mmm. Happy New Year!

  4. Happy New Year Pattie! Great post and perfectly timed reminder for me as I haven't enjoyed bulletproof coffee for some time. I forgot how good the coconut oil is for the brain and how delish bulletproof tastes. Thanks!

  5. Sometimes I think I actually miss that snow (growing up in Michigan) ...but then I look outside and say NAH... LOL
    I have not tried that coffee - sounds good. I do know NOW how good real butter and coconut oil are for us even though they are so fattening.

    1. Well maybe I did exaggerate a wee bit! It was just exciting to me that my regular ordinary coffee, which I had always enjoyed, felt like a rich, creamy, frothy treat. It made me feel energized, an alert, and remember I use decaf, so no caffeine rush. I also was satisfied and full for the entire morning. I seriously look forward to it each morning now. So maybe life changing was a bit far fetched, but it is morning changing at the very least. Thanks for the comment. Try it and let me know if you agree.
