Baby steps!

Good morning everyone. I am glad to have a moment to check in and catch up with everyone. So much going on over here. I know everyone is busy too. It gets hard to keep up with all that has to be done. Baby steps right.? It all always does seem to get done, so don't fret and take things one step at a time.

 I have always been a planner, but I'm starting to realize that sometimes you just have to let the urge to control, schedule, and micro manage things, go out the window and take things as they come. Believe me, while dealing with a family death, two devasted kids, and a brother whose whole life has been ripped apart, I am learning this lesson all to well. I can't fix things, and I can't control things. I can only control myself, my body and my life.

recipe imageIt's important for me during these hectic times to be able to automate my life as much as I can. I learn so much from all of you and your blog posts. I am constantly looking for ways to make things easier. I love the microwave scrambled eggs in the morning. Adding some fresh spinach, or artichokes along with some cheddar or smoked gouda ( thanks Carey for the idea!!) makes it a creamy delicious and quick breakfast.

That and the one minute flaxseed muffin have been my go to breakfast for weeks now.
I tried minichicks version on Saturday and it was very good. I made it in the bowl and poured the almond milk on it. It was very warm and delicious. Next time I may top it with some natures hollow sugar free jam next time. I love adding the sugar free josephs maple syrup. It adds alittle more sweetness and a hint of maple flavor.

 Can you all list some of your favorite go to breakfasts? I'll post them in a future post and maybe we can all get some new ideas.

  1. My go to breakfasts are egg based or the minute muffin. Thanks for sharing the tip on the Beck diet solution. The more ideas/tips, etc. the better because what resonates with one person won't for another. So, the more options available for each person to tap into, the better; we're each bound to figure out what works for us at some point.

  2. I have been adding some natures hollow syrup to every muffin I make - whether its coconut or flaxseed or almond flour. You know me fast and easy for breakfast.
    toast or tortilla eggs muffins - ooh and pancakes. You can make the pancakes ahead of time and then just warm them up w/some natures hollow jam on top.

  3. I agree, it has to be simple or else I just can't do it! I am a planner too and like to know what is going to happen, but at 40 I realized I needed to let go of that :) Hope your brother is starting to heal.

  4. You have a lot going on, so it is always good to see your posts! This one is a great one too.
    I'll have to check out the Beck Diet solution. I kind of feel like I have a grip on things, I am just eating too much again, and too quickly.
    My go to breakfast is the Healthful english muffin with Jif Crunchy PB and Raspberry Nature's Hollow. I love the fiber the muffin provides, but it does have sucralose:( Choices...On the days I don't go to zumba, I fry a potato with 2 jimmy dean precooked sausage patties and add an egg at the end for flavor. I love to put red chili flakes in everything right now, so I add them too. I also love making eggs with spinach, tomato and meat. I have started eating monteray jack cheese and I have never added cheese to things:( Kind of a bad calorie add.
    The bad thing I have been doing too is eating a bit before Zumba and then coming home starving and eating a bit more and then lunch an hour later. I need to eat once and then lunch! I know what I need to do, I just find it easy not to listen to me:) Just like my kids sometimes!
    Hugs back at you! You aren't forgotten, even when you aren't around for awhile. You are amazing to be there for the kids and your brother.

  5. Some go to breakfast for me - Peanut butter toast, the minute muffin in a bowl - i like chocolate :), cheese omelet with salsa on top and a little meat if I have it, lately I've just had coffee with cream and then waited until snacktime to eat.

  6. I've got a new minute egg recipe that I love. I mix a TBSP or 2 of chopped green chili's (in a can) with a mix of 2 eggs and a bit of heavy whipping cream and some cheese (cheddar, mexican blend or whatever) in a mug and microwave for a minute (stir and may need 30secs or so more). Yummy! Tastes like a chili relleno :) I like fast and easy, too!

  7. I always enjoy reading your posts, and your 'realness'.
    Life is full of lessons. I really do think this is what this life is for...learning, experiencing, making choices...We certainly get plenty of opportunity to do that.
    Often for breakfast I make a few eggs and add some spinach and little parm the last few minutes of cooking. Super fast.
